Vegan Caramel Peanut Butter Brownies
This one is for all my vegan friends who deserve gooey chocolately delicious desserts too. This is my caramel peanut butter brownie recipe... super easy only takes about an hour including baking time and these brownies are soooo decadent! Please enjoy!
For the Caramel:
1/4 cup coconut oil
1/4 cup of golden syrup
2 tablespoons peanut butter
1 teaspoon of cinnamon
1 teaspoon of salt
For the Brownies:
2 cups of all-purpose flour
2/3 cup of cocoa powder
2 teaspoons of baking powder
1 teaspoon of salt
1 cup of soy or almond milk
1 cup of caster or granulated sugar
3/4 cup of soft brown sugar
1/2 cup of coconut oil, melted
2 tablespoons of ground flaxseed
200grams of vegan chocolate chips or chocolate, chopped
1/2 cup of crunchy peanut butter
To make the caramel; in a microwave proof bowl add all the ingredients except for cinnamon and microwave for 1 minute, or until everything is melted. Add in cinnamon and whisk until everything is thoroughly incorporated and smooth. Set aside for later.
Preheat the oven to 165°C fan forced (or 395°F / 185°C). Line a brownie tin with baking paper and set aside.
For the brownies; in a large mixing bowl, sift together all dry ingredients. Then in a small mixing bowl, whisk together milk, sugars, coconut oil, peanut butter, and flaxseeds until thoroughly incorporated and creamy.
Fold the wet mixture into the dry, until just combined. Then fold in the chocolate chips before pouring the batter into the brownie tin.
Smooth out the top of the brownie batter then using a tablespoon, spoon caramel onto the batter. Using a knife or toothpick drag it through the mixture to create swirls. (See picture)
Put the brownie in the oven and bake for 40-45 minutes, or until the top has risen and crusted slightly. Remove from the oven and cool for at least 15 minutes before slicing into squares. Please enjoy!
These brownies will keep stored in an airtight container in the fridge for up to a week.
This recipe makes double amount of caramel you need for the brownies, store the remaining caramel in the fridge and heat in the microwave before serving on ice cream, strawberries or anything else you like!
