Springtime Chopped & Grated Salad

This is the easiest salad ever. Simply chop and grate broccoli, celery, apple, carrot, and cheese, sprinkle with almonds and parsley, and pour over lemon & honey dressing. Fresh, vibrant, and fruity deliciousness awaits!



INGREDIENTS

For the salad:

  • 1 large broccoli

  • 2 stalks of celery

  • 1 red apple

  • 2 large carrots

  • 1 cup of cheddar cheese, grated

  • 1/3 cup chopped parsley, divided

  • 1/3 chopped or flaked almonds


For the dressing:

  • 1 lemon's juice

  • 3 tablespoons extra virgin olive oil

  • 1 garlic clove, finely diced

  • 1 teaspoon dijon mustard

  • 1 teaspoon salt

  • 1 teaspoon of honey


INSTRUCTIONS

  • Roughly chop the broccoli and celery and add to a large salad serving bowl. Grate the apple, carrots and cheese then add them to the bowl too. Give everything a good mix with your hands until everything is incorporated.

  • In a measuring cup or small bowl, combine all of the dressing ingredients (olive oil, lemon juice, mustard, honey, garlic and salt), and mix well until the dressing is slightly thicker and shiny.

  • Pour the dressing over the salad and stir until all ingredients are well coated. Garnish with parsley and the almonds.

  • Serve and enjoy!

Notes: This salad will last up to 4 days in the fridge in an airtight container
