Spiced White Bean Dip
This zesty, spicy, and garlicky white bean dip is oh so creamy and will fulfil all of your dip cravings. Toasty cumin and turmeric add this deliciously warming quality - and is perfect eaten straight away (slightly warm) or cool!
INGREDIENTS
1/4 cup extra virgin olive oil
2 cloves garlic, roughly chopped
1 sprig fresh rosemary or thyme
zest of 1 lemon
1 tablespoon lemon zest
1 teaspoon cumin seeds
1 teaspoon chilli flakes
1 teaspoon turmeric
3 x 400 grams cans of white beans (Drained)
salt and pepper, to taste
INSTRUCTIONS
Add the olive oil and garlic to a saucepan, on medium heat. Add the rosemary or thyme sprig, spices, lemon zest and white beans. Cook for 5 minutes then remove the rosemary, and set aside.
Pour the white bean mix into a blender and blend for 1 minute or until creamy. Add the lemon juice, salt, and pepper, and then give it a final mix before serving.
To serve, add white bean dip to a small bowl or plate then drizzle with more olive oil and add the reserved rosemary or thyme sprig. Please enjoy!
