Spiced Pumpkin and Walnut Bread
Pumpkins are in season right now so guess what? I’m making alllll the pumpkin recipes. This one is a delightfully moreish spiced pumpkin and walnut bread, which is satisfyingly fluffy and healthy!! Baking this bread will release the most appetising aromas into your house - and smell just like comforting cinnamon, ginger and nutmeg! I suggest serving this with butter and honey, or perhaps goats cheese and grilled peaches - whatever floats your boat!
This recipe is also wheat, gluten and refined sugar free!
INGREDIENTS
2 cups almond flour
1/2 cup coconut flour
1 tsp cinnamon
1 tsp nutmeg
1 tsp ginger
1 tsp baking soda
1 tsp salt
2 large eggs
1 cup of pumpkin puree (I roasted some pumpkins, then scooped out the flesh and blended it to a purée)
1/4 cup butter or coconut oil
1/3 cup maple syrup or honey
1 tsp vanilla extract
2/3 cup of walnuts, divided
INSTRUCTIONS
Preheat your oven to 175 C fanforced or 350 F. Grease a loaf tin and line it with baking paper.
In a large mixing bowl, whisk the dry ingredients together. Add about half the walnuts to the bowl and mix. Next, add the remaining wet ingredients and blend everything together with a hand mixer on medium speed until just combined.
Pour the batter into your loaf tin, sprinkle with the remaining walnuts, and cook for 45 minutes or until a tester comes out clean! Please enjoy!
