Smash Burgers

Stop right there! Don’t press that Ubereats button because I have the easiest, fastest and most delicious burger for you! This is my ultimate quick and easy smash burgers recipe - lots of cheesy meaty goodness plus just the right ratio of pickles, onions and special sauce. Turn this up a notch and make my brioche buns to go with them or don’t!!) - either way you’ll delight your friends, family, and yourself! Please enjoy!


This recipe will make 6 smash burgers and takes about 20 minutes (10 minutes prep, 10 minutes cooking and assembly)



INGREDIENTS

  • 6 burger buns (Or see my brioche bun recipe which I served mine with!

  • 6 large patties of beef mince (I used a mix of chuck and brisket for fat content and flavour - ask your butcher for some if not sure!)

  • 2 tablespoons of extra virgin olive oil

  • Salt and freshky cracked black pepper, to taste

  • 12-18 slices of American cheese / sliced cheddar

  • Approximately 18 rounds of sliced dill pickles (enough for 3 each burger or to your liking)

  • 4 leaves of iceberg lettuce, shredded

  • 1 white or brown onion, finely diced

  • Tomato Sauce or Ketchup

  • American mustard

INSTRUCTIONS

  • Finely dice your onion then shred your lettuce and set aside. Set your condiments on the bench top to prepare for the burger assembly.

  • Put your buns in the oven on a low heat to keep warm while you make the burgers.

  • With clean hands, roll the beef mince into large balls, then flatten into a thick disc shape (keep in mind as they cook the diameter of the patties will shrink).

  • In a large frying pan or cast iron skillet, add the oil and set to the highest heat possible on the stovetop. Once the oil is very hot and smoking add the patties one by one (be careful as the oil might spit). Generously season your patties with salt and pepper, then with the back of a spatula press them down. Cook the patties on the first side for 2-3 minutes then turn.

  • Add the cheese slices on top of cooked side of the patties, turn the stovetop heat to low and cover the pan with a lid to steam (and melt) the cheese. Cook the patties and cheese, covered for 1-2 minutes or to your liking.

  • Take the buns out of the oven, slice in half then spread tomato sauce and mustard onto the buns. Add the patty and cheese, then top with the dill pickles and a sprinkling of diced onion. Serve immediately and enjoy!
