Refreshing Celery Soda

This recipe will make 1 bottle


Celery soda is refreshing in a way only effervescent beverages can quench thirst; a bit sour, a bit sweet, and surprisingly complex with the addition of cardamom pods and the vegetal notes.


I first heard about celery soda this year, while watching an episode from Bon Appétit on YouTube where they visited NYC Sandwich Shop that made there own celery soda! I was instantly intrigued by the prospect, as I had 2 big bunches of celery hanging out in my fridge and not going anywhere fast (there’s only so much celery juice you can drink!).


A quick note; mine contains vodka and makes for a lovely low alcohol summer afternoon drink. However, this soda would still be lovely without it, just add more soda and lemon to the bottle in its place. EQUIPMENT


  • 1 swing top glass bottle


INGREDIENTS


  • 5 large stalks celery

  • 2 large lemons

  • 2 teaspoons of Maldon salt

  • 6 cardamom pods

  • 1 1/4 cups water

  • 1/2 cup caster sugar

  • 750 mLs soda water or water and a Sodastream machine

  • 1/2 cup vodka (or gin if you prefer)


INSTRUCTIONS


  • Wash and thinly slice the celery including leaves. Then wash the lemons, cutting off thick slices all the rind (retain the inside for juice and set aside).

  • Lightly crush half the cardamom pods.

  • Bring water and sugar to a rolling boil in a medium sauce pan. Add the celery, lemon rind strips, all the cardamom pods (crushed and whole), as well as salt.

  • Lower heat slightly and simmer for at least 5 minutes, stirring occasionally.

  • Ensure sugar is fully dissolved, if it is remove the saucepan from the heat and using a spider or sieve remove celery leaves and starts, the crushed cardamom pods, and lemon rind strips.

  • Juice the lemons and add to the celery syrup.

  • In a swing top glass bottle add the vodka or gin if you are using, celery syrup, and soda water. Refrigerate for at least 2 hours before serving.

  • To serve; fill a tumbler or thick walled glass with ice, pour in celery soda and garnish with lemon juice and a slice of lemon or fresh celery. Enjoy!
