Orange, Mozzarella and Mint Salad

This is perhaps the most lush and juicy small salad for two. Highly recommend serving this with a pasta dish for dinner, or perhaps an afternoon lunch accompanied by a cheeky glass of rosé. Please enjoy alongside some crusty bread and olive oil!


This recipe will serve 2 people, multiply the quantities to serve as a starter for more people!



INGREDIENTS

  • 1 large orange, segmented

  • 1 bunch of fresh mint

  • 1/2 a small red onion, finely sliced

  • 1 ball of fresh buffalo mozzarella

  • a handful of nuts and seeds (I used almonds, linseeds and sunflower seeds)

  • 3 tbsp extra-virgin olive oil

  • 2 tsp sherry vinegar

  • salt and freshly cracked black pepper

  • crusty bread, to serve (optional)

INSTRUCTIONS

  • Toast the crusty bread, if you are using. In a small mixing jug combine olive oil, sherry vinegar and a little orange zest. Stir to combine and set aside.

  • In a salad serving bowl add orange segments, mozzarella, red onion, mint, nuts and seeds. Sprinkle of over salt and cracked pepper. Pour over salad dressing and enjoy!
