Non-Alcoholic Raspberry Lemonade Spritz

On Friday’s I usually feature my cocktail of the week, however today I’ve decided to include a spritzy non-alcoholic lemonade for something a little different (and in the spirit of Dry July!)
This is my Raspberry Lemonade Spritz - perfect for both adults and kiddies alike; it doesn’t feature too much sugar and it’s absolutely packed with fruity and zesty mouthwatering flavours!!
This Raspberry Lemonade Spritz is perfect served at an afternoon BBQ or tea, as you can make it ahead of time, serve a big batch of it in one go, and it’s a definite crowd pleaser!
To make simply follow below instructions, and if you would like to make this a little naughty simply add 1/2 cup of your favourite vodka or gin to the batch! Please enjoy!
1 1/2 cups caster or granulated sugar
1 1/2 cups fresh lemon juice , about 6-8 lemons
1 cup of fresh or frozen raspberries
2 cups of water
2 1/2 cups of sparkling or soda water
Combine sugar, half the raspberries, and 2 cups water in a saucepan over medium heat. Bring to a boil and stir until sugar has dissolved. Remove from heat, strain out and discard the raspberries, then cool to room temperature.
Add the lemon juice to the simple syrup and stir to combine. Refrigerate until cold.
When ready to serve, add the 2 1/2 cups of soda water and the remaining raspberries then stir.
Serve with ice and perhaps more lemon and mint, and enjoy!
