Mandarin Gin Lemonade

I don’t know about you guys but I’ve officially renewed my gin membership after a couple of months break (never mind my gym one!).
Today, I’ve made an absolutely divine Mandarin Gin Lemonade because sometimes you just need something different but still the familiar, you get me? This cocktail is very reminiscent of the classic G&T we all know and love but a whole lot more sweet, zesty, and herbaceous!

To make a cocktail jug that serves 5 people
1 1/2 cups of simple syrup (make syrup with 1 part water and 1 part caster sugar)
1/5 cup of campari
2 cups of freshly squeezed lemon or lime juice (or a combination of both)
1 1/2 cups of London dry gin
1 cup of soda water
2 sprigs of fresh mint leaves, plus more for garnish
In a large jug combine the sugar syrup, campari, lemon juice, gin, mandarins, and the mint. Muddle the mint and mandarins in the liquid, then stir until everything is well mixed. Strain out large pieces of the mandarin pulp and mint.
Top with soda water, then serve in glasses of your choice topped with a sprig of mint and/or mandarin wedge. Enjoy!
