Lemongrass and Ginger Mojito
This is a mojito like no other that’s for sure! This cocktail features zesty lime, although I’ve replaced the traditional mint with lemongrass and ginger - this makes for a punchy, herbaceous, and beautifully fragrant pick me up. I would recommend serving this cocktail before dinner as an aperitif to excite your taste buds (it would pair beautifully with Thai or Vietnamese cuisine)
This recipe will make 2 cocktails
1 cup water
1 tablespoon of lemongrass and ginger tea (I used T2)
2 slices of ginger
2 shots (90mLs) of white rum (like Bacardi)
1 lime, sliced into wedges
1 sprig of mint or parsley, roughly chopped
Brew the tea using the 1 cup of water boiled, add the ginger and set aside to cool slightly.
Place the half the lime wedges and rum in a glass and muddle with a muddling stick or spoon to release all the juice from the lime.
Add ice to two serving glasses, pour the muffled rum mixture into the glass, add the parsley or mint leaves then top with ample amounts of lemongrass and ginger tea. Stir to make sure everything is thoroughly mixed, then garnish with more lime and enjoy!
