Healthy Chocolate Crackle Slice

This delicious sweet treat (and secretly healthy) is based on one of my favourite treats as a kid - chocolate crackles! (If you know, you know!!) Chocolate crackles are usually made with coconut oil and cocoa, or chocolate, and puffed rice, and they are a classic favourite at New Zealand and Australian birthday parties (well kid's birthday parties, but they should make more appearances at parties, regardless of age!!)


This recipe is vegan, gluten-free, and full of nutrients from chia seeds and almonds. The best part is this recipe is no-bake and no-fuss - it takes less than 15 minutes to put together and before you know it you have a deliciously mouth-watering and chocolate coconut filled treat on the table!



INGREDIENTS

  • 1 cup almonds and walnuts, roughly chopped (or your favourite nut/ a mixture - hazelnuts, cashews, walnuts and pecans work well)

  • 1 cup puffed rice (like rice bubbles or rice puffs)

  • 1/4 cup chia seeds

  • 1⁄2 cup dates, roughly chopped

  • 1/2 shredded coconut

  • 1 tsp salt

  • 1⁄4 cup cacao nibs (optional)

  • 2/3 cup coconut oil

  • 3 tbs almond butter

  • 1⁄3 cup rice malt syrup (or honey if not vegan)

  • 2/3 cup cacao powder

  • 2 tsp vanilla extract

INSTRUCTIONS

  • Line a slice tray with baking paper and set it aside.

  • Combine chopped nuts, puffed rice, chia seeds, chopped dates, shredded coconut, coconut flakes, salt, and cacao nibs in a medium bowl.

  • Melt coconut oil over low heat in a milkpan or small saucepan. Add the rice malt syrup, almond butter, cacao powder, and vanilla then stir well to combine. Pour over the dry ingredients and then mix until thoroughly incorporated. Spread mixture onto the prepared tray and press down on the surface to flatten.

  • Freeze for at least 3 hours before cutting into even pieces. After, store in fridge or freezer. Please enjoy!
