Healthy “Apple Crumble” Slice

This nutritious and delicious slice is crunchy, chewy, sweet and little bit salty! It tastes just like apple crumble also!!! Packed full of protein, this slice will keep you full of energy and satisfy your tastebuds too!


This slice is refined sugar, wheat, gluten and dairy free! Please enjoy!


INGREDIENTS

  • 1 1/2 cups of chopped mixed nuts like walnuts, hazelnuts, almonds and pecans

  • 1/2 cup of sunflower seeds and/or flaxseeds

  • 1 cup of flaked or shredded coconut

  • 10 dates roughly chopped

  • 1/3 cup of sultanas or cranberries

  • 1 pear or apple finely chopped (I used pear in this one and it was so delish!)

  • 1 tablespoon of chia seeds

  • 1/3 cup of maple syrup or honey

  • 2 egg whites

  • 2 tablespoons of coconut oil

  • 2 teaspoons of cinnamon

  • 2 teaspoons of salt

  • 1/3 cup of hot water

  • 1 1/2 teaspoons vanilla extract


INSTRUCTIONS

  • Preheat the oven to 170 degrees C fan-forced (or 190 degrees C / 350 degrees F). Grease and line a slice tin with baking paper and set aside.

  • In a large bowl, mix together all the dry ingredients, then add the wet and mix until thoroughly combined. Add mixture to the slice tin, then press down firmly with an offset spatula (or bottom of a cup) and smooth out the top. Sprinkle with more flaked almonds, coconut or honey if you wish.

  • Bake for 18-20 minutes. Then remove from the oven and allow to cool for at least 10 minutes before slicing. Please enjoy!
