Easy Lemony Slaw

Bright, fresh, and crunchy! Is there a more refreshing side dish than a big bowl of lemony slaw? This would also be perfect in burritos or just on its own!
Notes: feel free to add in any other crunchy fruit or vegetable you like, shredded carrots, apple, radish or green cabbage would also be delicious!
1 (600g) red cabbage, core removed, finely shredded or chopped
1 Lebanese cucumber, finely chopped
1 bunch of fresh flat leaf parsley or mint, chopped
1/3 cup (80ml) olive oil
1 garlic clove, finely diced
1 lemon, juiced
Salt & freshly ground pepper
Add the cabbage, cucumber, and herbs to a bowl. Toss well to combine. To make the lemony dressing, whisk the olive oil, garlic, lemon juice, salt and pepper together. Pour over slaw and toss to combine. Enjoy!
