Chickpea and Butter Bean Hummus
This is my all time quick, easy, and CREAMY hummus recipe using chickpeas and butter beans! Perfect with a big slice of crusty bread!
INGREDIENTS
1 400g can chickpeas
1 400g can butter beans
2 tablespoons tahini (light roast)
100mLs extra virgin olive oil
3 tablespoons freshly squeezed lemon juice or apple cider vinegar, or to taste
3 cloves garlic, crushed
1 tablespoon ice cold water
1 pinch sea salt, or to taste
a dash of extra virgin olive oil and paprika, to serve (optional)
INSTRUCTIONS
Drain chickpeas and butter beans. To a blender or food processor add the chickpeas, beans, tahini, olive oil, lemon juice (or ACV), garlic, and salt, then blend to a thick paste. Lastly, add the water until you get light and creamy consistency.
To serve, add the hummus to a bowl, drizzle over olive oil and sprinkle over paprika if you wish. Enjoy with crusty bread, crackers or sliced veggies.
