Blackberry & Fennel Shrub

It’s Friday so you know what that means!!? Time for my Cocktail of the Week! Today I’m taking a break from my usual tequila, and using my next favourite spirit... gin!


Today we’re making a blackberry & fennel shrub! The word shrub originates from the Arabic word sharab, which means “to drink”.... and you definitely have to drink this one!!! Shrubs are usually fruit flavoured, acidic syrups that go great in both alcoholic and non-alcoholic drinks alike!


This blackberry & fennel shrub, sounds a bit unusual- and it is! It’s an unusually delicious, herbaceous and refreshing mix of blackberry & lemon syrup complimented by fragrant fennel and London dry gin. Give it a try and let me know what you think!

This recipe will make 8 cocktails



INGREDIENTS


  • 1 punnet of fresh blackberries (about 12)

  • 1/4 of a fennel bulb, thinly sliced

  • 1/2 cup of caster sugar

  • salt to taste

  • 1/2 cup of water

  • 3/4 cup of fresh lemon juice

  • 3/4 cup of London dry gin

  • 3/4 cup of dry white wine or sparkling wine

  • To garnish: strip of lemon rind or blackberries.


INSTRUCTIONS

  • Put a medium pot on high heat. Add blackberries, fennel sliced, sugar, a pinch of salt, and water to the pot.

  • Bring to the boil, stirring occasionally brfore reducing heat to medium - low. Simmer for 10 minutes or until the mixture has reduced slightly and all the sugar is dissolved.

  • Carefully strain mixture, discarding any fruit / fennel pieces or seeds then set aside to cool slightly.

  • In a large cocktail jug add gin, lemon juice and blackberry syrup. Add ice and give it a good stir until the glass is chilled and everything is mixed well.

  • Top with dry white wine or sparkling wine and give everything a good stir then pour into your glasses of choice.

  • Garnish cocktail with an extra slice of lemon rind, twisted, or blackberry.
